Quick Sausage, Onion, Peppers & Hash Brown Dinner
In need of a quick dinner idea? Yes, please! This easy skillet sausage, onion, & peppers dish is quick and healthy, plus you can substitute fresh veggies and potatoes for frozen options to save even more time. This would be a great dish to add to your camping meal planning as well!
For this recipe, you will need these ingredients:
- 1 pkg Turkey Sausage, sliced (or your preference of meat)
- 1 Green Bell Pepper. sliced (fresh or frozen)
- 1 Onion, sliced (fresh or frozen)
- Frozen Hash Browns (or diced fresh potatoes)
- 1 tbs garlic
- Pepper to taste
- Ketchup (optional!) for the hash browns
Mix the chopped sausage, peppers, onion, and pepper in a bowl while you prepare the frozen hash browns. If using fresh potatoes, chop those and start pan frying with some olive oil, salt, & pepper. I used two pans, one to cook the frozen hash browns in (as package directs you) and one for the sausage, onion, and peppers mix. I did NOT add any olive oil to the sausage mix, as I let the juices from the meat and veggies keep it moist. Stir this frequently to prevent sticking.
I cooked my hash browns until crispy (only flipping once), cooked the sausage mix until the sausage was browned and the veggies were soft (about 8 minutes on med-high heat), and then tossed it all together in a bowl. Since I always try to include a fresh veggie, I made an avocado, tomato, and carrot plate to go along with this dish.
By itself, this dinner took less than 15 minutes prep and cook. Having a great chopping knife helped speed up the prepping process! My 21 month old of course enjoyed the sausage and hash browns, and she loves avocado, too, while my husband enjoyed this quick and easy dish that he didn't need to assist with! I'm all about easy, flavorful foods and this one is on my list now.
